Cassidy, Soldier, reaper, torbjorn, junkrat, mercy, lucio, zenyataa are pretty easy heroes for newcomers who can aim
Dont play tanks its the hardest role!

That's Overwatch for you. You are not too late tho. Maybe its biased because I obviously know how the game works, but I don't think it takes that long to understand how everything works. Its pretty simple after playing for like 2 weeks. Also there's many people coming back after long time and some new players so no one knows how to play 5v5 and its just random. Will need some time for people to learn I guess. But yes 5v5 is more random than 6v6 IMO.
