Ketchup & Pickle Cupcakes
(For when you hate yourself and everyone around you.)
Ingredients:
1 cup all-purpose flour
½ cup granulated sugar
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup ketchup (yes, really)
¼ cup pickle juice (for "tang")
1 egg
¼ cup vegetable oil
½ tsp vanilla extract (not that it'll help)
½ cup diced pickles
For the "Frosting":
½ cup mayonnaise (trust me, it's bad)
¼ cup powdered sugar
2 tbsp ketchup
1 tbsp pickle relish
A dash of paprika for "decoration"
Instructions:
Preheat oven to 350°F (175°C). Line a cupcake tin with paper liners (to contain the disaster).
In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together ketchup, pickle juice, egg, oil, and vanilla. Try not to cry.
Gradually mix the wet ingredients into the dry ingredients. Fold in the diced pickles.
Spoon the batter into cupcake liners, filling them about ⅔ full.
Bake for 18-20 minutes, or until they spring back when touched (if they dare).
While they cool, prepare the frosting by mixing mayo, powdered sugar, ketchup, and pickle relish.
Once cupcakes are cool, frost them and sprinkle with paprika.
Serve to unsuspecting guests. Watch their souls leave their bodies.
