if you want some "medieval theme" def will recommend vinland saga, its so goooood.

some must see animes:

attack on titan (kinda medieval, history so nice)
hunter x hunter (this one is a legend in the world of animes)

these below are some "mainstream" animes:

demon slayer (excellent visuals)
jujutsu kaisen (excellent visuals and good history)
solo leveling (relative new anime just got into the mainstream, very good too, has the format of mmorpg)
haikyu (volleyball anime underrated af, if you interested in a sport anime)

honestly, another was one of my first anime when i was like 12, which was 13 years ago so yeah, my memory of it isnt that clear, but it´s normal to dislike hyped or well rated anime and vice versa

Full Metal Alchemist Brotherhood
Mob Psycho (Pretty down to earth and slice-of-lifey at times)
One Punch Man (Hype parody/comedy)
Chainsaw Man (Pretty absurd, but good)
Death Note (Classic. Falls off later, but start is super enjoyable)
Fate/Zero (Only fate worth watching IMO)

Hit or Miss:
Steins;Gate
Chainsaw Man (It gets pretty out there at times, but over all good)
Re:Zero (Isekai. Pretty cringe at times and overly anime, but the thriller parts are very well done and the plots good.)

Hype Fight Porn with some plot:
Jujutsu Kaisen
Jojo's

Sports:
Haikyuu (Volleyball anime. Pretty good, pretty basic too.)
Blue Lock (Absurdist soccer/football anime that's pretty hype but also insane)
