Why is the schedule shifting everyday? The starting match today is 2:30hrs late than the first match of the tournament? What's the reason behind this?

for the schedule to be good for NA or APAC, the games would have to last until 4-6 in the morning in Europe. if you start in the early mornings of NA, you can cater to a much larger chunk of the population because you're also making an EU-friendly schedule.
it's impossible to make a perfect schedule that satisfies all regions and timezones
Yup, you said everything... The schedule of the games needs to be 1st good to the players/teams that will play (based by the location of the Championship), and after that, to the viewership
Imagine putting a game to start at 02am in Europe (making the players change their biologic body "clock") cause of more viewership, probably making the matches being worse since the pros can't reach their max potencial in the game cuz they're tired... It makes no sense
