Maybe Butterfly is second for me but that's a very controversial opinion.
I think Kyouan Hey Kids is underrated.
Hmm maybe Turing Love as well. Love sou's singing.

These are just some songs. These are more recent ones except for Butterfly.
Butterfly is also one of the first songs that Animenz covered. Yes that Animenz who made the sheet music for the piano version of Unravel. 9 Months ago he posted another cover of Butterfly. Still one of my fav songs. Also if you follow Raon Lee. She made a Butterfly cover which is pretty good I guess.

Gurenge is heavily overrated and overplayed. It's a great song, but it was ruined when it got overplayed.
Same thing happened to Silhoutte (naruto) and Hey Kids! Aragato (noragami).
Unravel is a classic, No Game No Life's OP is a classic as well. Erased's first op is also a classic, along with SAO Crossing Fields. Daddy Daddy Doo (love is war) is a great song, though I recently got sick of it.
Overall, my favorite anime op's shift from time to time. As of right now, my favorite would probably be SAO Catch the Moment (ordinal scale).
yea. Fate has like 30 anime series. So uhh. Idk. I don't want to start searching. I only watched Fate stay night and a little of Fate apocrypha. Also I guess we can list anime movie endings so I would say Hana ni Bourei by yorushika is slightly underrated in the anime community. I personally like A whisker away. But it was basic af. The animation and the songs hard carried it.
Anohana is another anime in which the song carried it imo. Secret Base carried that anime for me honestly because of how good the song paired with the overall theme of anohana. A bit of that also applies to DBGT with its song, Dan Dan Kokoro.
Fireworks (the movie's song) was really good.
For this season, Fruits Basket + Tokyo Revengers had some really good songs.
I have not watched tokyo revengers yet. I personally liked the Fruits Basket songs as well though.
Fireworks was made by Yonezu Kenshi and Daoko. If it wasn't good I'd be surprised. But the movie was ehh.
Anohana was great for me Secret Base is reallly good.
I guess another we could add is My Dearest. After I learned that it was created by Ryo. I was like ohhh. That's why everything but the music in the anime is shit. I mean EGOIST also created some of the songs but that explained a ton why the opening was so good.
