I mean when I think of Pokemon mouse I think of Pikachu. I'm also pretty sure Pikachu has the only species description as "mouse. Dedenne is the "antenna" Pokemon.

dedenne looks much more like a mouse than pikachu does
also piakchu has become so popular and such its own thing that its not associated with being a "mouse pokemon" or a "bird pokemon" its just pikachu
