if you like story new vegas is the best
if you like graphics and gameplay fallout 4 is the best.
the fallout TV show is great too
76 and 3 are both greats games nowadays, but i wouldn't start with them unless u have friends to play 76 with

if you like strategy games though like civilization 6 i'd recommend the old world blues MOD for hearts of iron 4

you should also watch the show! to be honest, haven't played any of the games and don't have very good knowledge of the lore in general but i still enjoyed the show. it's not an adaptation i don't think... i think it's a continuation so it might spoil things you'll have to look into that perchance. it's 8 episodes and each are about an hour long. maybe i'm a bit bias though since the fallout stuff has always piqued my interest i will just never find the time to play the games

the show was good, there's not many good game adaptation/live action which makes it look even better. The only great adaptation I can think of is Arcane and cybepunk I guess.

the canon ending of the first 3 fallouts are already known, it doesn't exactly tell you the canon endings of 4 and new vegas, but it gives some big hints if you already know the lore. I'd say its safe to watch without spoiling a lot
