mushishi or kino's journey (original not remake) if you want a chill serious episodic series, mushishi is about a spirit catcher where he goes from town to town getting rid of spirits, often having a sad or bittersweet ending to the episode.
Kino's journey has each episode with the mc at a different town with it's own unique customs, one episode for instance is a town where you have a number that goes up when you do something good, down for something bad, if you do enough good things you could even kill someone without going to jail as long you did enough good things to offset it.
Terror in Resonance for more action mystery, where you follow a terrorist group with unknown motives as they avoid getting caught by the government, kinda cat and mouse like death note
Time of Eve is a more niche OVA about a cafe where you aren't allowed to say if your a robot or a human in a world where robots look like humans and do service work like being maids, ect

a must watch, it was an icon on their time. but it is timeless, still hella entertaining even now.
the story conclusion is great too since it's anime original. it's only 24~25 episodes too
